I could never be a 100% vegetarian because it’s impossible for me to stop eating charcuterie (prepared meat products like ham, bacon, dried sausage etc), especially in France. But veggies are an adventure worthy to be followed! Because veggies are tasteful and light! They are healthy and good! I admire people that manage to follow up their adventure 100%!
Potato Puree with garlic (skordalia)
A soft and velvety potato puree flavored with garlic, olive oil and red wine vinegar such as the Xérès vinegar! It’s simple amazing!
Tartare Sauce
A tartare sauce made with Greek yogurt or fromage blanc for those in France, some shallots, capers, and cucumber pickles (cornichons), it’s light and very tasteful as well as powerful!
Beetroot salad with breuil fresh sheep cheese and cumin
The breuil is a cheese that can be found in France at the Pays Basque and the Béarn but in this recipe can be replaced by the Greek myzithra or the Greek anthotyros or even with ricotta! These types of cheese go well with the beetroot and the whole thing goes marvelous with cumin! Try it and see for yourself!
Rice pudding with soft spices
A rice pudding with soft spices (cardamom, cloves and cinnamon) that is very moist, sweet and tasteful :-) It also has some coconut milk and a little bit of mascarpone to bring everything together marvelously!
Carrot salad with white wine balsamic vinegar, coconut syrup and cinnamon
A delicious salad which is very unusual :-) Carrots go very well with coconut syrup and cinnamon, and the white wine balsamic vinegar brings some acidity that is not very intrusive and brings the dish to another level! :-)
Danish Pastry
This recipe contains two types of Danish pastry: one in form of a star and with a filling of brown sugar (or rapadura sugar if you can find it), orange and cinnamon, and a second one in form of small snails with a caster sugar filling and some apricot jam on top! Both recipes require your attention and time but the result is so good that it simply worth it!
