The vegan adventure is more advanced that the vegetarian one! And it’s even more admirable because people refuse to eat any product coming from animals! Personally, despite my problem with charcuterie, stop using butter and eggs in desserts, it’s the most difficult task ever. But I do make vegan recipes, and I don’t share them to be trendy, I do it just for the pleasure of sharing and thus often revealing their Greek origin :)

Lentils salad with carrots, onion and celery
A beautiful salad with green lentils and veggies sliced in small cubes for more savor and with a vinaigrette with lemon and mustard for even more taste :-) If you are vegetarian and not vegan, you can eat them with a poched egg! It’s really delicious with or without the egg! It’s your choice :-)

Cream of mushrooms
A cream of mushrooms that is easy and really good! Mushrooms are cooked in a pan with a little bit of olive oil, some garlic and some thyme! It’s a fine cream that can be used as a side dish or during the aperitif! You chose!

Orange confit
Make this orange confit that is so simple and soo good! Eat it as is or use it into your pastries! When it’s so simple to make, why on earth buy orange confit?

Christmas biscuits with olive oil and spices (vegan melomakarona)
This recipe is made traditionally in Greece with honey, but in this version honey was replaced by coconut syrup and thus it’s 100% vegan! And it’s soooo good :-) Enjoy!

Green salad with melon, apricots and rosemary
This wonderful salad is fresh and fruity but has some “seriousness” thanks to rosemary! The vinaigrette is perfumed with rosemary and this changes everything, even if it has not a strong taste ;-) But it’s there giving its character ;-)

Semolina Halva
This is a vegan dessert which is delicious and has a long tradition in Greece. The semolina is cooked and roasted into olive oil and then is soaked into a nice syrup which is perfumed with lemon zest and cinnamon! You can also find dried raisins and almonds for more flavor!
