I could never be a 100% vegetarian because it’s impossible for me to stop eating charcuterie (prepared meat products like ham, bacon, dried sausage etc), especially in France. But veggies are an adventure worthy to be followed! Because veggies are tasteful and light! They are healthy and good! I admire people that manage to follow up their adventure 100%!
Meringue Italian biscuits with spices and dried fruits
These biscuits are called brutti ma buoni and they are very good! Spices (cinnamon, ginger and 4-spices) give them a mild character and roasted almonds and hazelnuts give their special character and some crunchiness! They are really good!
Runner beans in tomato sauce (fassolakia)
These runner beans are really simple to make in their tomato sauce with onion and parsley! It’s light, easy, and quick to make! It’s perfect for a summer meal when you can find them fresh or even in winter if you use frozen! It’s really simple and good!
Artichokes "à la Polita" (like in Constantinople)
These artichokes are cooked along with potatoes, carrots, onions, and peas, and they are perfumed with dill and have the taste of lemon! It’s a Greek traditional dish and it’s very special and unusual but so tasty!
Frittata with spinach, leeks and feta
As you might know the frittata is an omelet cooked in the oven and it’s really good! This version has leeks, spinach, onions, cream and cheese (feta and gruyere or French comté)! It’s perfumed with dill and has the taste of a spanakopita (a Greek pie with spinach) without the phyllo crust! It’s really good and quite easy to make!
Very simple endives (chicory) braised in butter
These endives (chicory) are very simple to make and really good! They only have some butter and some water, and that’s all! So why try to make something more complicated ?
Raspberry Muffins
These muffins are really easy to make and sooo good! You don’t even need a mixer to make them ;-) And you can use fresh or frozen raspberries! Cinnamon brings its special flavor and everything goes well together :-) It’s so tasteful! It’s up to you!
