This chickpeas salad with feta cheese and green olives cream is very particular! All ingredients work well together, and the green olives cream brings a strong taste to the chickpeas in a very special manner! You need to taste it as you get an idea yourself :-) Note that it’s better when left in the refrigerator overnight! It’s up to you!

Ingredients

  • 240gr of pre-cooked chickpeas
  • 100gr green olives cream (tapenade)
  • 80gr of feta cheese
  • 10 cherry tomatoes
  • 1 tablespoon of olive oil
  • ½ teaspoon of thyme
  • ½ of a small onion
  • 2 pinches of fleur de sel or coarse salt
  • 5 turn mills of Kampot black pepper

Steps

  • Drain and rinse the chickpeas (if you're using them from a jar)
  • Peel the onion and finely chop it
  • Add the chickpeas into a big bowl
  • Add the green olives cream
  • Toss everything together with a tablespoon
  • Add the olive oil and toss
  • Add the onion to the salad
  • Toss well eveything together
  • Sprinkle the feta cheese on top
  • Toss gain with tablespoon
  • Add the thym and toss
  • Add the cherry tomatoes
  • Toss everything together
  • Add salt and pepper and toss for a last time
  • Ready!
