This chickpeas salad with feta cheese and green olives cream is very particular! All ingredients work well together, and the green olives cream brings a strong taste to the chickpeas in a very special manner! You need to taste it as you get an idea yourself :-) Note that it’s better when left in the refrigerator overnight! It’s up to you!

Ingredients
- 240gr of pre-cooked chickpeas
- 100gr green olives cream (tapenade)
- 80gr of feta cheese
- 10 cherry tomatoes
- 1 tablespoon of olive oil
- ½ teaspoon of thyme
- ½ of a small onion
- 2 pinches of fleur de sel or coarse salt
- 5 turn mills of Kampot black pepper
Steps
- Drain and rinse the chickpeas (if you're using them from a jar)
- Peel the onion and finely chop it
- Add the chickpeas into a big bowl
- Add the green olives cream
- Toss everything together with a tablespoon
- Add the olive oil and toss
- Add the onion to the salad
- Toss well eveything together
- Sprinkle the feta cheese on top
- Toss gain with tablespoon
- Add the thym and toss
- Add the cherry tomatoes
- Toss everything together
- Add salt and pepper and toss for a last time
- Ready!
