  • ¼ of a medium onion
  • ¼ of a big red or green pepper
  • 1/6 of a big garlic clove
  • 2 teaspoons of olive oil
  • 1,5 pinch of smoked bacon
  • ½ teaspoon of coarse salt
  • 7 turn mills of Kampot black pepper
  • 2 big pinches of oregano
  • 100ml of tomato puree
  • 250ml of cold water

Steps

  • Chisel finely the onion
  • Cut the pepper in medium to big cubes
  •  Heat-up a small sauce pan
  • Put chiseled onion and stir to evaporate its humidity
  • Add olive oil and sauté for 3’-4’
  • Press garlic and sauté with onion for 1‘
  • Add smoked bacon cut in small cubes and sauté for 2’
  • Add red pepper and sauté for 3’
  • Add tomato puree and the water
  • Add salt, pepper and oregano
  • Stir together and cook with the lid on for 15’ in low-medium heat
  • If at the end it still remains some water, remove the lid
  • Increase the heat
  • Let the water evaporate, the sauce is better without much water!
