Ingredients
- 1 big potato or 3 small ones
- 1 teaspoon of thyme
- 1 small bay leaf
- ½ of a big garlic clove
- 1 teaspoon of olive oil
- 50ml of water (at least)
- Fleur de sel, Kampot black pepper
Steps
- Peel and cut the potato in small dices
- Press or finely slice the garlic
- Heat a small pan
- Add the olive oil
- Stir the garlic and the bay leaf
- Add the potato dices
- Stir with a wooden spoon to cover them with olive oil
- Season with salt, pepper and thyme
- Stir with the wooden spoon
- Add the cold water and stir
- Cover with a lid and cook in mild heat for about 10’-15’
- Check now and then to see if there is a need to add some water

This is an easy and rapid side dish for every kind of meat or fish that was cooked with thyme, oregano, or sage.
