Chick peas keftas with spinach and spices

These chick peas keftas with spinach and spices (cumin, paprika and turmeric) are really good and easy to make! It’s sure that fried food is not very light but these keftas are not fried for a long time and the quantity is not much so it’s all good! Furthermore, I suggest you eat them with a tahini sauce like in the recipe of the British Chef Gordon Ramsay! If you prefer you can just keep the keftas and have a 100% vegan dish! It’s up to you :-)

Ingredients

  • 230gr of chick peas in a jar already drained
  • 150gr of fresh spinach
  • 1/3 onion of medium size
  • 1 teaspoon of olive oil
  • ½ teaspoon of cumin seeds
  • ¼ teaspoon of paprika
  • ¼ teaspoon of turmeric
  • a pinch of fleur de sel or coarse salt
  • 5 turn mills of Kampot black pepper (for the spinach) + 5 turn mills for the keftas
  • 1 teaspoon of flour

Steps

  • Peel and chisel finely the onion
  • Cut-off the ends of the spinach leaves
  • Wash them and drain them, then slice them in horizontal slices
  • Heat-up a pan
  • Add the cumin seeds and roast them a little bit until they reveal their aroma
  • Remove cumin seeds into a bowl
  • Clean-up the pan with a bit of kitchen paper and heat it up again
  • Add the onion and stir constantly until it starts to shine and has no more humidity
  • Add the olive oil and stir until it becomes a bit brown
  • Add the spinach and stir until it’s cooked
  • Add salt and pepper and stir again
  • Remove from heat
  • Into an electric chopper add:
    • the chick peas
    • the spices
  • Turn on the machine and insist until the chick peas are all mixed
  • Remove into a bowl
  • Add the cooked spinach and stir everything together with a wooden spoon
  • Add the remaining pepper and stir
  • Add the flour and stir again
  • Use two tablespoons to form keftas of the same size, to do so, you need to add some of the mix into one tablespoon and use the other to form the kefta
  • Place the keftas into a dish
  • Cover with plastic wrap and reserve in the fridge for 15’
  • Add special oil for fried food into a casserole and heat it up
  • Once the oil very hot, place the keftas into the oil, one at a time, and cook for 30’’, until they change color and are cooked a bit in the exterior on all sides
  • Take the keftas out of the frying oil and place them onto a dish covered with kitchen paper to absorb the exceedance of oil
  • Serve immediately!
  • It’s delicious and quite delicate :-) and it’s even better with the Tahini Sauce :-)

Inspiration

I got the idea to make these keftas while watching this video by the British Chef Gordon Ramsay! The video was on Indian food and as I like Indian food very much, I decided to make them :-) I just added the onion because it suits me better but if you wish you can watch the original recipe around the 5’50’ of the video.
