Veggies are the star ingredients of a diet, and this since the dawn of time. But vegetables are not here only for diets; they are also here to make our lives healthier, to give us strength, to make our skin and our heart better; but also to surprise us with the variety of their recipes and their light character especially when they are cooked without a lot of fat and when they are eaten in reasonable quantities because as my ex-coach Weight-Watchers used to say: “an elephant eats only salads and weighs 5 tons” :-)
Beetroot millefeuille and Chavignol goat cheese
A veggies millefeuille with beetroot which goes very well with the French goat cheese called crotin de Chavignol! It’s slightly perfumed with thyme and it has honey which gives it a round taste in mouth! Try it, it’s very good!
Green salad with dried garlic flakes and Xérès vinegar
A beautiful salad with mesclun, corn salad, red oak salad and a secret ingredient called semolina garlic! It’s a French ingredient and it’s so flavorful that perfumes the salad wonderfully, if you don’t find it try dried garlick flakes maybe it’s good also :-) Furthermore, the Xérès vinegar (you can add a red wine vinegar) gives it some extra punch and here you go with plenty of energy!
Leeks and celery roots with lemon and dill
This is a dish that changes the taste of leeks because it adds some celery roots and the whole thing has another very unusual taste that is very pleasant and surprising! It also has some dill and of course some lemon juice and you have never tasted a dish like this!
Potatoes with mandarin for Christmas
Some potatoes for Christmas or winter time flavored with duck or goose fat and with some mandarin zest and a little bit of bay leaf for extra flavor! It’s good and easy to make!
Black radish and carrot salad with coriander seeds and orange blossom
A fresh salad that couples black radish and carrots and that is quite unusual because it’s perfumed with coriander and orange blossom! It’s so good that’s surprising!
Soup with two celery, apple and hazelnuts
This is a fine soup made with celery roots and fresh celery but also with apples! It’s very unusual but sooo good and you really need to give it a try! The roasted hazelnuts on top bring some crunchiness and also their special taste! It’s a marvel!
