The recipe: Cinnamon pie with fylo crust by Akis Petretzikis

Cette recette originale couple bien un crémeux à la cannelle avec un fond de tarte fait avec la pâte fylo. Elle est assez légère et simplement délicieuse J Essayez-la et vous allez vous régaler !

I inaugurate this section where I will present other people recipes with this recipe by the Greek chef Akis Petretzikis. He had won Top Chef in 2010 and since he is present in the Greek culinary scene with this youtube channel, his site, his TV shows, his books, his magazines and his e-shop. He is everywhere, even as guest in the youtube channel of Jamie Oliver, where I discovered him. He is funny and his recipes are honest enough to be worth mentioning :)

This is a very simple recipe and a really good one, with the exception that I don’t use Chantilly on the top because I think it makes the dessert heavy in fat. The recipe’s name is kanelopita or κανελόπιτα. The only problem with you French people is that the recipe is in English and the youtube video in Greek (!) but it’s not rocket science, it’s only a recipe! So get going with it because the result is way too good to be ignored or to be frighten of foreign languages or other foreign adventures :)

And the ingredients to get you started:

For the crust

  • 8 phyllo dough sheets
  • 50 gr butter, melted
  • 30 gr granulated sugar

For the filling

  • 250 gr cream cheese
  • 50 gr heavy cream 35%
  • 150 gr brown sugar
  • 2 medium size eggs
  • 2 tablespoons of cinnamon
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of baking powder
  • 1/2 teaspoon nutmeg
  • 1 pinch salt
