Airy chocolate cake (without flour) and with "nutella" whipped cream

A completely airy chocolate cake due to the lack of flour that is simply irresistible! Moreover to taste it with a side “nutella” flavored whipped cream, it’s just a marvel! To test it as soon as possible :-)

Ingredients

for the chocolate cake

  • 15gr of butter
  • 35gr of dark chocolate
  • 1 egg
  • 15gr of caster sugar

for the "nutella" whipped cream

  • 25ml of heavy cream
  • ½ teaspoon of chocolate spread type “nutella” (*)

Steps

for the chocolate cake

  • Preheat the oven at 135°C
  • Chop the chocolate in small pieces with a knife
  • Heat-up a casserole
  • Add the chocolate and the butter into a bowl and simmer them over a double-boiler to melt them down
  • Once melted, let them cool a little bit
  • Separate the egg white from the yolk and add the egg yolk into the melted chocolate and the white into another recipient
  • Stir the egg yolk into the chocolate with a rubber spatula
  • Add a little bit of salt into the egg white and use an electric hand mixer to foam and form a meringue
  • Once the meringue is starting to form, add little by little the caster sugar and continue to whisk after each addition; gradually a beautiful and shiny meringue is going to form until soft peaks
  • Add 1/3 of the meringue into the melted chocolate and stir with delicacy to loosen up the chocolate
  • Add progressively the rest of the meringue and stir delicately after each addition
  • Butter up a small plate going into the over
  • Add the chocolate mix
  • Bake for 25’

for the "nutella" whipped cream

  • Before starting to make the cake put a metallic recipient and the whisks of the electric hand mixer into the freezer
  • Add the cold heavy cream into the metallic recipient and start whisking until the whipped cream is starting to form
  • Add the chocolate spread of “nutella” type and whisk again a bit
  • Enjoy the “nutella" whipped cream with the chocolate cake!

(*) I’ve made the whipped cream with both real nutella and with an organic chocolate spread; it’s true that with the organic spread we taste the flavor of hazelnuts better, it’s up to you :)
