This is a wonderful little cream with apricots and it’s based on a diplomate cream with pistachio paste and apricots in puree and in pieces! It’s really good and quite light in taste and comes in two versions: the first one has a more light apricot taste and a stronger vanilla flavor, and the second one has a more strong taste of apricot with being intrusive! Both versions are really good and quite easy to make! Go ahead and make them, after all, I will be here for any question!

A wonderful Swiss roll or jelly roll dessert with apricots and pistachio paste! It has a fine apricot jam and fresh apricots cut in pieces with some pistachios sprinkled on top! The whole this is covered with Italian meringue and even if it requires some technical skills it’s not that difficult to make! After all, I will be there for any question so go ahead and make this fine dessert because you worth it!
