Welcome to this new edition of the solo food newsletter! Mandi – Tortellini the Greek way

This is a wonderful recipe coming from far away (!) and namely from Cappadocia! It really worth the detour, because at the end, it’s quite easy to make homemade fresh pasta, with a filling of ground meat, seasoned with paprika, and which is served with a light tomato sauce, and a cold sauce made with Greek yogurt spiced with paprika as well! It’s simply wonderful and quite surprising! Just try it and you will see :-)

But this time, squid is stuffed the Greek way with a Greek recipe in its light version J It contains rice, red peppers, onions and a pinch of Cayenne pepper just to give it some extra force! It’s really good and light so that you can eat it without any remorse and with no regrets!
