Dear all,

Welcome to this new edition of the solo food newsletter! In this edition you will discover 1 new recipe for an entremets as the French say which means between courses and this type of desserts were served between courses, but over the last century they took their rightful place at the end of a meal! This entremets has the taste of Early Grey but in the cream and not in the biscuits, which make it so special and intriguing! Give it a try and even if it seems difficult it really worth the try!

You will also find a new article regarding the Morozov collection which is on exhibition at this moment at the Fondation Louis Vuitton, and you will discover and admire a splendid exhibition, unique in the world because it reunites art works that are separated in various places and museums of the world!

And finally, I present you a new Christmas Menu for this year that gathers all the recipes of this month and it’s simply splendid! That’s why I named like this “Splendid” :-)

Earl Grey

This is a very special and unique entremets! It has the name and taste of Earl Grey and this makes it the dessert of honor for this year :-) We taste the tea into the cream and not in the biscuits and this changes everything because I had never imagined this possible! The dessert starts with a layer of frangipane biscuit which has some macerated prunes and pine nuts, then it continues with some more macerated prunes, a layer of sabayon cream with Earl Grey and another biscuit (lady finger this time) which is soaked with prune juice and whisky, it finishes with a layer of sabayon cream and it’s simply splendid! For decorating, I used some macerated prunes and some shavings of white chocolate! It’s a recipe coming from the Great French Pastry Chef Christophe Felder and his associate Camille Lesecq! Simply marvelous :-)
